They do it because the elevation provides a different perspective optically than a ground view would. A view from some place like the space needle, the stratosphere or the CN tower is something you can never appreciate from the ground. The binoculars provide a closer view of the features from the top, a perspective you cannot get from the ground.
They do it to get a different perspective of our world. Things look a lot different when you view it in a different way.
You may stand there and look at the ‘ground’ but normal people view and enjoy the whole land surface in an angle you never get to see while on ground.
For the same reason people jump off those buildings. Because they can.
